Founded by José Ortiz, a man whose journey on the island began in a tent at just 15, Flipper's initially gained popularity as a ‘typical Brit hangout’. During the pandemic, a surge in popularity among locals for their roast beef offering helped Flipper's thrive despite challenging times. The restaurant also maintains a beloved tex-mex menu, with tacos being a particular favourite. Through the years, Ortiz has witnessed the shift from family tourism to shorter party-focused stays, though long-standing bonds have been forged with returning British families who span generations. The bar continues to uphold its family-friendly charm, complete with a humorous sign cautioning parents about unruly children. Now, under the guidance of José’s son Samuel, Flipper's is poised to continue its legacy as a beloved fixture in the evolving landscape of Ibiza's tourism scene.
